Lemon Ice
- 3 cups water
- 1 cup sugar
- 12 cup lemon juice
- 12 cup limoncello
- 1 tablespoon lemon zest, grated
- mint leaf
- Mix water and sugar in a 2 qt sauce pan and bring to boil over high heat.
- Boil uncovered, stirring occasionally for 5 minutes or until sugar is dissolved.
- Remove from eat, stir in lemon juice, limoncello and lemon zest.
- Pour into a 13 x 9 baking pan.
- Freeze one hour; stir.
- Cover - freeze two more hours or overnight until firm.
- Scrape and scoop into serving glasses and top with mint.
