Lemon Ice

  1. Mix water and sugar in a 2 qt sauce pan and bring to boil over high heat.
  2. Boil uncovered, stirring occasionally for 5 minutes or until sugar is dissolved.
  3. Remove from eat, stir in lemon juice, limoncello and lemon zest.
  4. Pour into a 13 x 9 baking pan.
  5. Freeze one hour; stir.
  6. Cover - freeze two more hours or overnight until firm.
  7. Scrape and scoop into serving glasses and top with mint.
