Boiled Navy Beans Recipe
- 1 lb Dry Navy beans, (2 c.)
- 2 tsp Sugar
- 1 tsp Salt
- 1 dsh Pepper
- 7 c. Cool water
- 1/4 lb Salt pork
- Pick over and wash beans thoroughly in cool water.
- Place beans in a 3 or possibly 4-qt saucepan, add in remaining ingredients, cover and SIMMER for 2 1/2 to 3 hrs till beans are tender but not mushy.
- Shake the pan occasionally to prevent sticking.
- Edible cow peas and soy beans may be cooked in the same manner.
- Makes about 6 c..
- These beans are delicious eaten as is, or possibly may be used for making soup or possibly salad.
