Tasty Taco Salad
- 1 head lettuce
- 1 onion, chopped
- 1 c. Cheddar cheese, shredded
- 1 large avocado, peeled and sliced (optional)
- 4 tomatoes, cut in wedges
- 1 can red kidney beans
- 1 lb. ground beef
- 1 pkg. taco seasoning mix
- 1 tsp. salt
- tortilla chips
- 1 c. Thousand Island dressing
- Drain kidney beans and rinse well with cold water; then drain on paper towel.
- Brown beef in skillet; drain grease from pan. Then add salt, beans and taco seasoning mix.
- Simmer for 10 minutes.
- Toss lettuce, onion, cheese, tortilla chips, avocado and tomatoes.
- Then toss both mixtures together.
- Garnish with additional tortilla chips.
- Pour in Thousand Island dressing, toss lightly again and serve.
