Swedish Meatballs With Sour Cream
- 1 12 lbs ground beef
- 2 cups soft bread cubes
- 12 cup milk
- 1 onion, chopped fine
- 7 tablespoons butter, divided use
- 2 12 teaspoons salt
- 2 teaspoons nutmeg
- 2 teaspoons paprika
- 1 teaspoon dried herbs
- 1 teaspoon dry mustard
- 14 teaspoon pepper
- 3 eggs
- 14 teaspoon crushed garlic
- 14 cup flour
- 2 teaspoons tomato paste
- 1 beef bouillon cube
- 1 (10 1/2 ounce) can consomme
- 1 cup sour cream
- noodles
- Soak bread cubes in milk.
- Squeeze dry and add to beef.
- Add onion, sauteed in 2 Tblsp.
- butter, salt, nutmeg, paprika, herbs, dry mustard, pepper and beaten eggs.
- Mix well and form into 48 small balls.
- Brown in skillet, using 1/4 cup butter.
- Add garlic and 1 more Tblsp.
- butter if needed.
- Blend in flour, tomato paste, bouillon cube, and consomme, adding enough water to measure 2 cups.
- Stir over low heat until sauce is thickened.
- Just before serving, stir in sour cream.
- Blend well.
- Serve with noodles.
