New York Cheesecake Squares
- 22 HoneyMaid Graham Wafers
- 1 pkg. (250g) Philadelphia Brick Cream Cheese, softened
- 1 pkg. (300g) pressed cottage cheese
- 1 env. unflavoured gelatine
- 1/4 cup fruit juice
- 1 tsp. vanilla
- 1 cup icing sugar, sifted
- 1/4 cup Kraft Pure Raspberry Jam or Strawberry Jam
- LINE the bottom of an 8" (2L) square pan with wax paper and then with 11 graham wafers, to completely cover base of pan.
- Beat cream and cottage cheeses together until smooth.
- Dissolve gelatin in fruit juice and add to cheese mixture along with vanilla.
- Mix well.
- Add icing sugar and beat until smooth.
- Spread cheese mixture evenly over wafer base.
- Top with jam and cover with remaining wafers.
- REFRIGERATE until firm, about 1 hour.
- Cut into squares and serve.
