New York Cheesecake Squares

  1. LINE the bottom of an 8" (2L) square pan with wax paper and then with 11 graham wafers, to completely cover base of pan.
  2. Beat cream and cottage cheeses together until smooth.
  3. Dissolve gelatin in fruit juice and add to cheese mixture along with vanilla.
  4. Mix well.
  5. Add icing sugar and beat until smooth.
  6. Spread cheese mixture evenly over wafer base.
  7. Top with jam and cover with remaining wafers.
  8. REFRIGERATE until firm, about 1 hour.
  9. Cut into squares and serve.
