Blueberry Compote

  1. Combine all of the ingredients in a small saucepan over medium heat.
  2. Cook, stirring occasionally, for 3 to 4 minutes, until the mixture bubbles, pulls away from the sides of the pan, and becomes syrupy.
  3. If you have fresh blueberries, all the better.
  4. Just add 2 tablespoons of water to the recipe.
  5. Goes with Best Oatmeal Ever (page 128), Creamy Millet (page 136), and Creamiest Buckwheat (page 138).
  6. Store in an airtight container in the refrigerator for 7 days or in the freezer for 2 months.
