Eggs on Turkish Bread with Dukkah
- 4 large eggs
- olive oil spray
- 450g loaf Turkish bread, cut in half lengthways then into 4
- 1/3 cup JL KRAFT Eggplant & Garlic Deli Spread
- 20g baby rocket leaves
- 2 roasted red capsicum fillets
- 2 tablespoons dukkah
- Lightly fry or poach the eggs to your liking, keep warm.
- Spray Turkish bread with oil then cook under a preheated grill for 1-2 minutes each side until golden.
- Place a piece of Turkish bread on each serving plate.
- Spread with Deli Spread then top each with some rocket, roasted capsicum and an egg.
- Sprinkle with dukkah, top with another piece of Turkish bread and serve immediately.
