Mustard Grilled Chicken

  1. Coat chicken with butter and oil.
  2. Broil or grill for 5 minutes per side, basting often.
  3. Season with salt, white pepper, and cayenne to taste.
  4. Combine vinegar, mustard, shallots, garlic, thyme, cumin, and cayenne.
  5. Mix well slowly blend in just enough remaining oil and butter to thicken.
  6. Mix well brush onto chicken to coat liberally.
  7. Coat with breadcrumbs Drizzle lightly with oil and butter mixture.
  8. Broil or grill until juices run clear when pierced with a fork serve hot.
