Cajun Gumbo Recipe

  1. Place flour in saucepan.
  2. With a whisk and whisking continually brown flour over medium heat.
  3. If browns too quickly remove from heat.
  4. Set aside in bowl.
  5. Heat oil in saucepan over medium heat.
  6. Add onion, celery, bell pepper and garlic.
  7. Saute until tender.
  8. Sprinkle with browned flour, cook 1 minute.
  9. Stir constant.
  10. Stir in water, hot sauce, stewed tomatoes, chicken broth and bay leaves.
  11. Bring to a boil.
  12. Reduce heat, simmer, uncovered 10 minutes.
  13. Add kielbasa, simmer uncovered 5 minutes.
  14. Add shrimp and okra.
  15. Cover.
  16. Simmer 5 minutes or until shrimp is done.
  17. Discard bay leaves.
  18. Stir in file powder.
  19. Serve over rice.
