Cajun Gumbo Recipe
- 2 tbsp. all purpose flour
- 1 tbsp. vegetable oil
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped bell pepper
- 4 garlic cloves, minced
- 1/4 cup water
- 3/4 tsp. hot sauce
- 1 (14.5 oz) can stewed tomatoes
- 1 (10.5 oz) can chicken broth
- 2 bay leaves
- Kielbasa, cut into slices
- Med. shrimp, peeled and deveined
- 1 (10oz) pkg. frozen okra, thawed
- 1 tbsp. file powder
- 3 cups cooked rice
- Place flour in saucepan.
- With a whisk and whisking continually brown flour over medium heat.
- If browns too quickly remove from heat.
- Set aside in bowl.
- Heat oil in saucepan over medium heat.
- Add onion, celery, bell pepper and garlic.
- Saute until tender.
- Sprinkle with browned flour, cook 1 minute.
- Stir constant.
- Stir in water, hot sauce, stewed tomatoes, chicken broth and bay leaves.
- Bring to a boil.
- Reduce heat, simmer, uncovered 10 minutes.
- Add kielbasa, simmer uncovered 5 minutes.
- Add shrimp and okra.
- Cover.
- Simmer 5 minutes or until shrimp is done.
- Discard bay leaves.
- Stir in file powder.
- Serve over rice.
