Authentic Irish Soda Bread (From Tipperary) Recipe
- 1 lb whole wheat flour
- 1/2 lb strong white flour
- 2 tsp baking pwdr/raising agent
- 1/2 tsp salt
- 1 ounce sugar
- 1 x egg
- 3/4 pt buttermilk/sour lowfat milk/skimmed lowfat milk
- Place all the dry ingredients in a large bowl.
- Slowly work in the egg and the lowfat milk, aiming for a soft dough consistency.
- Knead for no more than 10 min.
- Form large rounds of the dough on a flat baking tray, stand for 30 min, and place in a preheated oven at 220C for around 40 min, or possibly till the loaves are lightly browned.
- Soda bread is a flattish loaf, served with meals and especially at breakfast with preserves.
