Pierogi Salad Recipe
- 4 c. mashed potatoes
- 1 pound sharp cheese
- 12 ounce. ricotta cheese
- 1/2 c. Parmesan cheese
- 1 box lasagna noodles
- 1 sm. onion
- 1 stick butter
- Cook lasagna noodles and drain.
- Layer cake pan with 1/2 of the noodles.
- Mix mashed potatoes with 3 cheeses (grated).
- Layer on top of noodles, then add in rest of lasagna noodles.
- In small frying pan heat butter and minced onion, fry till light brown.
- Pour this over casserole.
- Bake for 15 min at 350 degrees.
