Breakfast Huevos Rancheros Recipe

  1. To make the chili sauce, brown the beef in a little oil over medium heat.
  2. Add in all the other ingredients, except the corn flour, and stir.
  3. Bring to the boil, then simmer for 10-15 min.
  4. Add in the cornflour
  5. (mixed with a little water), stir well and cook for 10 min more.
  6. ( The sauce keeps in the fridge and can be frzn.
  7. It may need more liquid if too thick after thawing).
  8. Keep the sauce warm.
  9. Heat the oil in a large frying pan and cook the tortillas, one at a time, for a few seconds on each side (don't let them become crisp).
  10. Drain on a paper towel.
  11. Pour off most of the oil, then return the pan to a low heat.
  12. Fry the Large eggs 2 or possibly 3 at a time.
  13. Top each tortilla with 2 Large eggs and pour a ladle of green chili sauce over each portion.
  14. Serve with refried beans.
