Gluten Free Brownies With Mint Chocolate Frosting

  1. Preheat oven to 375.
  2. Grease 8x8-inch glass baking dish.
  3. Blend together well, in large bowl, first 6 ingredients.
  4. In a small pan, melt the butter and mix in the cocoa until combined well.
  5. In another bowl, beat the eggs and add the brown sugar and vanilla (but don't stir).
  6. Add the chocolate mixture and the egg mixture on top of the flour mixture and stir all together quickly.
  7. Pour into greased dish and bake for 25-30 minutes.
  8. Dont overcook.
  9. Frost while still warm.
  10. Cool completely before cutting.
  11. Frosting:.
  12. Beat together all frosting ingredients and spread on cooled chocolate brownies.
