Couscous With Apricots

  1. Cut up apricots coarsely and combine with water.
  2. Follow package directions for proper amount of water.
  3. Add lemon juice and butter, stir and cover.
  4. Bring water to boil.
  5. When water boils stir in couscous and continue stirring until water boils again.
  6. Remove pot from heat, cover and allow to sit 2 or 3 minutes, until water is completely absorbed and couscous is tender.
