Cheesy Rice and Broccoli
- 1 baking pan (I used a tin foil pan)
- 1 non stick cooking spray
- 1 cup shredded cheddar cheese
- 1 1/2 cup shredded colby/ jack cheese
- 1 can cheddar cheese soup
- 1 can broccoli cheese soup
- 1 1/2 cup rice (uncooked)
- 1 tbsp butter
- 1 packages frozen broccoli (I used the florets)
- 1/2 cup milk
- Prepare rice according to directions on package (I didn't add the sugar and also took about 5 minutes off the cooking time)
- Preheat oven to 350
- Coat the bottom and sides of pan with cooking spray
- Combine cooked rice, cans of cheese and shredded cheese to baking pan-mix well
- Stir in broccoli (can be room temperature)
- Add more cheese if desired
- Stir in milk and butter
- Bake about 30 minutes
