Turkey Sausage Patties
- Cooking spray
- 12 ounces ground skinless turkey breast
- 1 large egg white
- 2 tablespoons water
- 1/4 teaspoon pepper
- 1/4 teaspoon dried basil, crumbled
- 1/4 teaspoon dried sage
- 1/4 teaspoon dried oregano, crumbled
- 1/8 teaspoon ground allspice
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon dried dillweed, crumbled
- 1/8 teaspoon garlic powder
- 1/8 teaspoon Chili Powder (page 277) or no-salt-added chili powder (optional)
- 1/8 teaspoon red hot-pepper sauce (optional)
- Preheat the broiler.
- Lightly spray a broiler pan and rack with cooking spray.
- In a medium bowl, using your hands or a spoon, combine the ingredients for the patties.
- Shape into 4 patties.
- Put the patties on the rack in the pan.
- Broil the patties 2 to 4 inches from the heat for 10 minutes.
- Turn over and broil for 5 to 10 minutes, or until no longer pink in the center.
- The berry of the evergreen pimiento tree and native to the West Indies and South America, allspice is so named because it tastes like a combination of cinnamon, nutmeg, and cloves.
