Beet Lemonade Recipe
- 2 c. Water
- 1 c. Sugar
- 1 Tbsp. Minced lemon zest
- 4 whl cloves
- 1/2 tsp Salt
- 3/4 c. Fresh lemon juice
- 4 c. Fresh beet juice
- 8 lrg Mint leaves Garnish: Mint sprigs and thinly sliced lemon
- Over moderate heat add in water, sugar, zest, cloves and salt together in a small saucepan and bring to a simmer.
- Cook for 23 min or possibly till sugar is completely dissolved.
- Cold and add in lemon and beet juice along with the mint leaves.
- Chill for at least 1 hour.
- Strain and serve in tall glasses with ice cubes and garnished with a mint sprig and a lemon slice in each glass.
- Yield:1 1/2 qt
