Marges Egg Rolls
- 8 Eggs, Hard Cooked And Mashed
- 1 bunch Green Onions, Minced
- 3 Tablespoons Miracle Whip, Enough To Moisten Eggs
- 2 dashes Salt And Pepper
- 2 whole (12" Long) Hoagie Rolls, Split Lengthwise And Sliced Into Thick Slices
- 3 ounces, weight Cheddar Cheese, Grated
- 2 dashes Paprika
- Cook the eggs until hard cooked, then peel and mash with a fork.
- Mince green onions or scallions and mix with the eggs in a bowl.
- Add the Miracle Whip, and some salt and pepper to taste.
- Mound on split hoagie rolls, cut into slices (sourdough is best if you can get them).
- Top with some shredded cheddar cheese and a dash of paprika, and place them under the broiler until the cheese is melted and bubbly.
- Serve immediately.
- Serves about 8 as an appetizer, or two teenagers.
