GRILLED FLAT BREAD
- 2 1/4 tsp (one package) dry yeast
- 1 cup warm water
- 1 tbsp olive oil, extra virgin
- 2 tsp granulated sugar
- 1/4 cup plain yogurt
- 1 1/2 tsp salt
- 2 1/2 cups bread flour
- Sprinkle yeast over warm water in a med/large mixing bowl
- Add oil sugar and yogurt and mix until well combined
- Add salt and bread flour then mix until flour is incorporated
- Turn dough out, onto lightly floured surface and knead until smooth and elastic.
- May take up to 15 minutes add only enough flour to keep dough from sticking
- Place in bowl and cover loosely with plastic wrap allow dough to rise in warm place until doubled (45+ minutes)
- On lightly floured surface cut dough into 8 equal portions (we use a scale).
- Shape each portion into a ball and let rest for 10 minutes
- Using a rolling pin roll each ball into a 4 inch circle.
- Let them rest for 10 more minutes before rolling them into 6 inch circles.
- 10 minutes before cooking flat breads heat grill to 500 f
- Just before grilling turn down to low heat.
- Place dough circles directly on grill 2 at a time until flat bread is lightly toasted
- Flip and cook other side.
- Watch them carefully they cook fast!
