Autumn Salad with Sweet Potato and Apple
- 100 grams Sweet potato
- 2 slice Bacon
- 1/2 small Apple
- 4 to 5 kernels Walnuts
- 1 as much (to taste) Lettuce, arugular or other leafy greens or herbs of your choice
- 20 grams Cream cheese
- 1 tsp Honey
- 1 1/2 tbsp White wine vinegar or rice vinegar
- 1 dash Salt
- 1 tbsp Olive oil
- 1 Black pepper
- Make the dressing: Soften the cream cheese by microwaving it for 10 seconds.
- Mix the ingredients marked in the order they are listed thoroughly.
- Don't peel the sweet potato and apple; cut them up into 1.5 cubes.
- Put the sweet potato cubes in a bowl of water, then steam or boil.
- (They taste better steamed.)
- Dry-roast the walnuts in a frying pan with no oil, and chop up roughly.
- Cut the bacon into 5 mm wide strips and saute until crispy in a dry frying pan.
- Wash the lettuce and/or other leafy greens or herbs you are using and dry well.
- Put them on a plate, and top with the items from Steps 2 and 3.
- Pour on the dressing just before serving, and top with black pepper.
- Enjoy!
