Sausage Frittata
- 400 g beef chipolata sausages
- 1 medium red onion, finely chopped
- cooking spray
- 50 g salami, cut into 2cm pieces
- 1 medium red capsicum, chopped finely
- 8 eggs
- 12 cup cream
- 12 cup tasty cheese, coarsely grated
- 12 cup flat leaf parsley, chopped
- Preheat oven to 200C Lightly grease a 6 cup square casserole dish.
- Heat a large frying pan over moderate heat.
- Cook and turn chipolatas for 4-5 minutes or until cooked.
- Drain on paper towels.
- Spray onion with oil.
- Add to pan.
- Cook and stir for 3 minutes.
- Add salami and casicum, cook for 4 minutes more or until vegies soften.
- Transfer to a medium bowl, let cool.
- Whisk egg, cream, cheese and parsley in a large jug.
- Stir into onion mixture.
- Pour into prepared dish.
- Top with chipolatas.
- Bake, uncovered, for 30-35 minutes or until mixture is set.
- To serve, cut frittata into slices.
