Sausage Frittata

  1. Preheat oven to 200C Lightly grease a 6 cup square casserole dish.
  2. Heat a large frying pan over moderate heat.
  3. Cook and turn chipolatas for 4-5 minutes or until cooked.
  4. Drain on paper towels.
  5. Spray onion with oil.
  6. Add to pan.
  7. Cook and stir for 3 minutes.
  8. Add salami and casicum, cook for 4 minutes more or until vegies soften.
  9. Transfer to a medium bowl, let cool.
  10. Whisk egg, cream, cheese and parsley in a large jug.
  11. Stir into onion mixture.
  12. Pour into prepared dish.
  13. Top with chipolatas.
  14. Bake, uncovered, for 30-35 minutes or until mixture is set.
  15. To serve, cut frittata into slices.
