Barbecued Baked Beans
- 4 slices bacon, cut crosswise into thin strips
- 1 c. finely diced Spanish onion
- 1 large clove garlic, minced
- 1 lb. cooked navy or pea beans or 16 oz. can B & M baked beans
- 3/4 c. ketchup
- 1 c. brown sugar
- 1 tsp. mustard powder
- 1 Tbsp. ground mild red chile
- Preheat the oven to 325u0b0.
- In a heavy skillet, saute the bacon strips over medium heat until crisp.
- Add the onion and garlic and continue cooking until the onion is transparent, but not browned. Transfer the bacon, onion and any fat that may have accumulated to a mixing bowl.
- Add the remaining ingredients and combine well. Pour the mixture into an ungreased 2-quart baking dish and bake, uncovered, at 325u0b0 for 2 1/2 to 3 hours.
- Serves 4.
