Garlic Flavoured Fried Meat & Potatoes

  1. Rinse the potatoes well, leave the skin on and cut into bite-sized chunks.
  2. Finely chop the garlic and green onions and cut the pork into bite-sized pieces.
  3. Warm the oil for frying and fry the potatoes.
  4. Once you can pierce them all the way through with a skewer, take them out of the oil and put on a plate.
  5. Grease a frying pan with a little vegetable oil (not listed in ingredients) and cook the garlic on a low heat.
  6. When the garlic is a golden colour and has become fragrant, add the pork and cook on a medium heat.
  7. When the pork changed to a light colour, add the potatoes from Step 2 along with the soy sauce, mirin, sugar and vinegar.
  8. Keep stirring the mixture from time to time, being careful not to let anything burn.
  9. Once the sauce has reduced, it's ready.
  10. Sprinkle some green onions over it to finish.
