Sophie's BBQ Mexican veggie burgers
- 1 cup drained and rinsed red kidney beans
- 1 tbsp BBQ sauce
- 1 tbsp enchilada/fajita mix of your choice
- 1 tsp garlic powder
- 1 chilli flakes to taste
- 1/2 cup drained sweetcorn
- 1/3 cup tomato sauce (passata or similar - it just needs to be smooth without any other herbs in)
- 1 cup chicken meat substitute, defrosted or fresh
- Preheat the oven to 180C.
- Put your chicken meat substitute and tomato sauce in a large bowl and blend until almost smooth (I like to leave a few chunks unblended).
- Add the rest of your ingredients and mix thoroughly.
- Split and shape into 4 patties.
- Bake for approximately 20 minutes, or until it starts to turn golden at the edges.
- Serve and enjoy!
