Devilishly Easy Chicken
- 4 chicken breast halves
- 1/2 tsp. salt
- 1/2 tsp. Freshly ground black pepper
- 13 c. regular or light mayonnaise
- 1/4 c. Parmesan cheese
- 1 tbsp. white horseradish
- 1/4 tsp. crushed red pepper flakes
- Place chicken breast halves between sheets of wax paper.
- With meat mallet or bottom of small skillet, pound chicken 1/4 inch thick.
- Sprinkle salt and pepper over chicken.
- In small bowl, stir together mayonnaise, Parmesan cheese, horseradish, and crushed red pepper flakes.
- Spread mixture over top of chicken breasts.
- Broil chicken on broiler pan 6 inches from heat, without turning, 7 minutes or until golden brown and cooked through.
