Bacon Spinach Bites
- 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
- 1/2 cup finely chopped red onion
- 1 pkg. (10 oz.) frozen chopped spinach, thawed, squeezed dry (about 1-1/2 cups)
- 6 slices OSCAR MAYER Bacon, cooked, drained and crumbled
- 3 Tbsp. flour
- 4 eggs, lightly beaten
- 1/4 lb. (4 oz.) VELVEETA, cut into 12 cubes
- Preheat oven to 350F.
- Mix cream cheese and onion in medium bowl until well blended.
- Add spinach, crumbled bacon and flour; mix well.
- Stir in eggs until well blended.
- Spoon evenly into 12 greased and floured muffin pan cups.
- Place 1 Velveeta cube on batter in each muffin cup; press down slightly.
- Bake 23 min.
- or until centers are set and tops are golden brown.
- Serve warm or chilled.
