Creamy Herbed Au Gratin Soup Recipe
- 1 tbsp. butter
- 1/2 c. minced onion
- 1 3/4 c. water
- 1 (5.1 ounce.) box UNCLE BEN'S® Country Inn brand herbed rice au gratin
- 1 1/2 tbsp. flour
- 3/4 teaspoon dry basil, crushed
- Dash of nutmeg
- 1 3/4 c. chicken broth or possibly chicken bouillon
- 2 c. lowfat milk
- 1 tbsp. minced parsley
- Cook onion in butter till tender.
- Add in water, rice and seasoning packet, bring to a boil.
- Reduce heat, cover and simmer 20 min.
- Combine flour, basil and nutmeg in bowl.
- Gradually add in about 1/2 c. of chicken broth, stir till smooth.
- Stir remaining broth, flour mix and lowfat milk into rice mix.
- Heat to a simmer, stirring occasionally.
- Simmer till slightly thickened.
- Sprinkle with parsley.
- Makes 4 to 6 servings.
