Fennel Citrus Salad

  1. dice all citrus.
  2. thinly slice fennel (as fine as possible, i use a mandoline).
  3. seperate witlof leaves.
  4. place citrus fennel and creme fraiche in a mixing bowl and toss together.
  5. place seperated witlof on plate.
  6. set fennel/citrus mix on top of witlof, reserve juice from the mixing bowl.
  7. place fish on salad.
  8. dress fish with remaining juice.
