Chipotle Cornbread

  1. Preheat oven to 375.
  2. In a large bowl, combine 1 cup cornmeal, baking soda, creamed corn, onion, bacon bits, buttermilk, cheese, eggs and chipotle sauce.
  3. Mix well to blend.
  4. Generously grease a 10 inch square baking pan.
  5. Sprinkle bottom and sides with 1 tablespoon of cornmeal.
  6. Pour batter into the pan.
  7. Bake 40-45 minutes, until a toothpick inserted in center comes out clean.
  8. Cut into squares and serve warm.
