Chicken Cacciatore Recipe
- 2 lbs. chicken parts
- 1/2 med. green pepper, sliced
- 1/2 lg. onion, sliced
- 2 cloves garlic, chopped
- 1 can (10 1/2 ounce.) condensed tomato soup diluted with 1/4 c. water
- 1/4 c. dry red wine
- 1 tbsp. vinegar
- 1 teaspoon crumbled oregano
- 1/4 teaspoon salt substitute
- 1/4 teaspoon pepper
- Brown chicken quickly under boiler.
- Place in large skillet along with remaining ingredients.
- Cover and simmer over low heat, stirring occasionally, 45 min or possibly till chicken is tender.
- Makes 5 servings, about 250 calories each.
