Cass's Spinach and Artichoke Dip
- 6 12 ounces marinated artichoke hearts, drained
- 12 cup light mayonnaise
- 12 cup light sour cream
- 5 ounces frozen chopped spinach, thawed and drained
- 34 cup grated parmesan cheese
- 34 cup mozzarella cheese, shredded
- 2 teaspoons garlic, minced
- Place artichoke hearts in food processor.
- Pulse a few times.
- You may dice by hand if you do not own a food processor.
- Squeeze any remaining liquid out of thawed spinach.
- Combine all ingredients in a bowl.
- Transfer to oven-safe dish.
- Bake for 20 - 25 minutes at 375 degrees.
- OR place in crockpot on low and heat through (about 90 minutes).
- Serve warm with crackers or tortilla chips.
