Serrano Ham con Poblano Breakfast Sandwich

  1. Grilled Poblano Relish: Cut chiles and onions into thin slices; place in bowl.
  2. Add vinaigrette; toss to evenly coat.
  3. For each serving: Spread 2 Tbsp.
  4. Salsa Verde evenly onto split sides of 1 muffin.
  5. Place 2 oz.
  6. ham, 1 Tbsp.
  7. Grilled Poblano Relish, 1 egg and 1-1/2 tsp.
  8. cheese on bottom half of muffin.
  9. Broil until cheese is melted.
  10. Top with 8 cilantro leaves, then cover with muffin top.
