Pepper Relish

  1. Combine all ingredients in a large Dutch oven, and bring to a boil.
  2. Reduce heat to medium, cook, uncovered, 30 minutes, stirring occasionally.
  3. Discard hot pepper.
  4. QUickly spoon hot relish into hot sterilized jars, leaving 1/4 inch headspace.
  5. Remove air bubbles, wipe jar rims.
  6. Cover at once with metal lids and screw on bands.
  7. Process in boiling water bath 10 minutes.
