Poblano (Rajas) Quesadillas Recipe

  1. Place the peppers in the broiler, turning every 2 minutes until the skins are mostly black.
  2. Remove and add peppers to a mixing bowl.
  3. Seal the top to let the peppers steam for about 10 minutes.
  4. When cool enough to touch the peppers, peel away the charred skins.
  5. Remove the stems and seeds and slice into strips.
  6. Set a frying pan over medium-low heat
  7. Add a tortilla to the pan; top with 1/4 of the cheese and 1/4 of the pepper strips.
  8. Fold the tortilla over and cook about 2 minutes.
  9. Flip and cook another 2 to 3 minutes.
