Turmeric eggs with shallots and pork belly
- 2 large eggs
- 1/2 tsp turmeric
- 1 pinch salt
- 2 tbsp margarine
- 1 large shallot
- 1/4 lb pork belly
- 1 tsp vegetable oil
- 1/3 tsp ground sage
- 1 pinch salt
- Cut the pork belly into bite sized pieces.
- Heat oil in a pan
- Add the pork belly amd season the pork with sage.
- Fry stirring occasionally till its starting to get crisp.
- Slice the shallots thinly add to pork belly.
- Fry till both are crispy.
- Put on a paper towel to absorb excessive oil.
- In a pan melt the margarine add the turmeric and salt.
- Beat the eggs add to margarine.
- Stirfry.
- When done add to a plate with the crispy pork bellies and crispy shallots.
- Serve hope you enjoy!
