Apple Loaf Recipe
- 1/4 c. Egg substitute or possibly 1 lg. egg
- 3/4 c. Water
- 1 tsp Salt
- 1 1/2 tsp Canola oil
- 1/2 tsp Hazelnut extract or possibly almond extract
- 1/3 c. Rye flour
- 2 2/3 c. Bread flour
- 1/8 tsp Grated nutmeg
- 2 Tbsp. Sugar
- 3 Tbsp. Nonfat dry lowfat milk
- 1 tsp Yeast
- 1/2 c. Apple nuggets Demerara sugar
- Place all ingredients, except for filling and topping, into bread machine, and process on dough cycle.
- Remove dough onto a floured board, cover, and let rest for 15 min.
- Roll out dough into a rectangle, sprinkle apple nuggets on top, and roll back up into a loaf.
- Cover and let rise for 45 min.
- Just before baking, slash with a lame, spray with cooking spray, and sprinkle demerara sugar on top.
- Bake in preheated 375 degree oven for 30 min.
- Turn out onto a cake rack to cold.
