Dee's Nachos

  1. Preheat oven to 375 degrees, make sure the rack is in the center position.
  2. On a flat cookie sheet or foil tin pizza baking sheet that has been coated with non stick cooking spray, lay 6 tortillas (or however many will fit) on the tray.
  3. Lightly brush the top of each tortilla with the vegetable, olive or canola oil and bake until they are light golden brown.
  4. About 10 minutes.
  5. (the edges will be a darker brown).
  6. While the tortillas are baking, pour half of the refried beans into a microwave safe bowl with about 1 tbsp of water and 1 tbsp of taco seasoning and mix thoroughly.
  7. Pour the remaining beans into the bowl and add about a teaspoon of taco seasoning and water and mix well again.
  8. Top the beans with a pinch of the shredded monterey jack and mild cheddar cheeses.
  9. Microwave for about 2 minutes.
  10. Stir when finished.
  11. Once the tortillas are finished baking, remove them from the oven and set the oven to broil, keep the rack in the center.
  12. Spread the refried beans generously over each tortilla.
  13. Top each tortilla with the shredded monterey jack and cheddar cheeses ( the more the better ) and then place the tray back in the oven for only a few minutes.
  14. The cheese will melt fast.
  15. Once the cheese has melted remove from oven.
  16. Using a pizza cutter, cut the tortillas into 4 slices topping each slive with one jalapeno ring.
  17. Serve while still warm.
