Dee's Nachos
- 12 -24 corn tortillas
- 1 12 cups shredded monterey jack cheese
- 1 12 cups shredded mild cheddar cheese
- jalapeno, rings
- taco seasoning mix
- 1 (16 ounce) can refried beans
- 2 tablespoons vegetable oil
- cooking spray
- Preheat oven to 375 degrees, make sure the rack is in the center position.
- On a flat cookie sheet or foil tin pizza baking sheet that has been coated with non stick cooking spray, lay 6 tortillas (or however many will fit) on the tray.
- Lightly brush the top of each tortilla with the vegetable, olive or canola oil and bake until they are light golden brown.
- About 10 minutes.
- (the edges will be a darker brown).
- While the tortillas are baking, pour half of the refried beans into a microwave safe bowl with about 1 tbsp of water and 1 tbsp of taco seasoning and mix thoroughly.
- Pour the remaining beans into the bowl and add about a teaspoon of taco seasoning and water and mix well again.
- Top the beans with a pinch of the shredded monterey jack and mild cheddar cheeses.
- Microwave for about 2 minutes.
- Stir when finished.
- Once the tortillas are finished baking, remove them from the oven and set the oven to broil, keep the rack in the center.
- Spread the refried beans generously over each tortilla.
- Top each tortilla with the shredded monterey jack and cheddar cheeses ( the more the better ) and then place the tray back in the oven for only a few minutes.
- The cheese will melt fast.
- Once the cheese has melted remove from oven.
- Using a pizza cutter, cut the tortillas into 4 slices topping each slive with one jalapeno ring.
- Serve while still warm.
