Venison Scallopini Recipe
- 2 pound deer steak
- 6 tbsp. oil oil
- 1 teaspoon garlic pwdr
- 1 (12 ounce.) can tomatoes
- 1 teaspoon oregano
- 1 teaspoon parsley flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 slices Mozzarella cheese
- Cut the round steak into 4 equal portions.
- In a skillet, blend the garlic pwdr with the extra virgin olive oil then brown the steaks on both sides over medium heat.
- Add in tomatoes and sprinkle the seasonings over the top of the steaks.
- Reduce the heat to very low, cover pan and slowly simmer for 45 min.
- Spoon the tomatoes and juices onto an oven proof platter, arrange the steaks on top, then lay a slice of cheese on top of each of the steaks.
- Put platter into a preheated 400 degree oven till cheese is melted and just beginning to brown.
- 4 servings.
