Mango Breakfast Blintz

  1. Whisk together the flour, milk and eggs until smooth.
  2. Chill for 20 minutes.
  3. Combine Philly* and apple.
  4. Heat 1 teaspoon of butter and 1/2 teaspoon oil in a non-stick frying pan over medium heat.
  5. Pour 1/4 of the batter into the pan and cook pancake until lightly browned, then turn and cook other side, remove.
  6. Repeat with remaining butter, oil and batter.
  7. Spread 1/4 of the Philly* mixture onto each pancake, leaving a 2cm edge uncovered.
  8. Fold in sides to make a parcel.
  9. Add remaining butter to pan and cook both sides of each parcel for 1-2 minutes to heat through.
  10. Serve drizzled with passionfruit pulp and alongside fresh pineapple.
