Mango Breakfast Blintz
- 3/4 cup milk
- 2/3 cup plain flour
- 2 eggs
- 150g PHILADELPHIA Mango Light Cream Cheese
- 400g pie apple Safeway 1 lb For $0.99 thru 02/09
- 30g butter
- 2 teaspoons oil
- 170g can passionfruit pulp
- fresh sliced pineapple, to serve
- Whisk together the flour, milk and eggs until smooth.
- Chill for 20 minutes.
- Combine Philly* and apple.
- Heat 1 teaspoon of butter and 1/2 teaspoon oil in a non-stick frying pan over medium heat.
- Pour 1/4 of the batter into the pan and cook pancake until lightly browned, then turn and cook other side, remove.
- Repeat with remaining butter, oil and batter.
- Spread 1/4 of the Philly* mixture onto each pancake, leaving a 2cm edge uncovered.
- Fold in sides to make a parcel.
- Add remaining butter to pan and cook both sides of each parcel for 1-2 minutes to heat through.
- Serve drizzled with passionfruit pulp and alongside fresh pineapple.
