Chocolate Chip Mint Parfaits
- 1/3 cup margarine or butter
- 3 Tbsp. sugar
- 1-1/2 cups milk
- 1 tsp. peppermint extract
- 1/2 cup chocolate
- 2-1/2 cups COOL WHIP Whipped Topping
- Mix graham cracker crumbs, margarine or butter and sugar; set aside.
- Prepare cheesecake according to package directions using milk, mint extract and food coloring if desired.
- Stir in chips; set aside.
- Reserve 1 tablespoon crumb mixture for garnish.
- In 6 (8-ounce) parfait or water glasses, layer half the cheesecake filling, remaining crumb mixture and 2 cups whipped topping; top with remaining cheesecake filling.
- Refrigerate 1 hour.
- Garnish with remaining 1/2 cup whipped topping, reserved crumbs and candies.
