Chocolate Chip Mint Parfaits

  1. Mix graham cracker crumbs, margarine or butter and sugar; set aside.
  2. Prepare cheesecake according to package directions using milk, mint extract and food coloring if desired.
  3. Stir in chips; set aside.
  4. Reserve 1 tablespoon crumb mixture for garnish.
  5. In 6 (8-ounce) parfait or water glasses, layer half the cheesecake filling, remaining crumb mixture and 2 cups whipped topping; top with remaining cheesecake filling.
  6. Refrigerate 1 hour.
  7. Garnish with remaining 1/2 cup whipped topping, reserved crumbs and candies.
