Bok Choy and Shiitake with Sesame Orange Dressing
- 1 pound bok choy baby
- 8 ounces mushrooms, shiitake dried, stems removed and sliced
- 4 medium carrots shredded
- 2 tablespoons orange juice
- 1 tablespoon tahini (sesame paste)
- 1 1/2 teaspoons soy sauce, light
- 1/2 teaspoon ginger freshly grated
- 1 tablespoon sesame seeds toasted
- Place a steamer basket in a large pot.
- Put enough water in the pot, just to reach bottom of basket.
- Bring to a boil.
- Add bok choy.
- Reduce heat to medium-low, cover and steam about 8 minutes or until bok choy is tender.
- Prepare a bowl with ice cubes and water, set aside.
- Transfer steamed bok choy in ice water, drain well.
- In a medium skillet over medium-high heat, add 1/2 tablespoon of oil until hot.
- Stir in mushrooms.
- Cook about 6 minutes or until mushrooms are tender, stirring once halfway through cooking.
- In a large bowl, whisk together orange juice, tahini, soy sauce and ginger.
- Stir in bok choy, mushrooms, and carrots and toss to coat.
- Garnish with sesame seeds.
- Serve warm or chilled.
