Shrimp and Fennel Salad
- 4 grapefruits
- 1 lb. cooked, shelled, and deveined shrimp
- 2 bulb fennel
- 1/2 c. chopped cilantro leaves
- 3 tbsp. extra-virgin olive oil
- 1/2 tsp. salt
- 1/2 tsp. Pepper
- Cut peel and white pith from grapefruit; discard.
- Holding grapefruit, one at a time, over large bowl, cut out segments between membranes.
- Add shrimp, fennel, cilantro, olive oil, salt, and pepper to bowl.
- Toss gently.
