Beau Rive Banana Cake

  1. Preheat oven to 325 degrees.
  2. Grease 9" x 5" loaf pan.
  3. In a small pot, mix raisins & rum; over medium heat, bring to a boil.
  4. Cook until most of the rum has been absorbed, then remove from heat and cool.
  5. In a large bowl, mix flour, baking powder, baking soda and salt; set aside.
  6. In another bowl, beat bananas, brown sugar, butter and vanilla until the sugar has dissolved.
  7. Stir into flour mixture until blended.
  8. Stir in cherries and rum/raisin mixture.
  9. Bake 1-1/4 hours or until pick inserted in center comes out clean.
