Maggie's Coconut Rice

  1. In a 2-quart pot bring the water and salt to a boil.
  2. Stir in the dry rice, cinnamon, and the coconut.
  3. Stir and return the water to a boil.
  4. Reduce the heat to the lowest possible flame.
  5. Place the lid on the pot and simmer for 20 minutes.
  6. Do not peek while the rice is cooking.
