Champ's carrot cake cookies
- 4 cup whole wheat flour
- 2 cup wheat germ
- 1 1/2 cup mashed cooked carrots
- 1 cup water
- 1 can (8 ounce) crushed pineapple with juice
- 4 tbsp ground nutmeg
- 2 tbsp vegetable oil
- 2 tbsp honey
- Place all ingredients in a large bowl.
- Mix thoroughly to combine.
- Roll out dough on floured surface to about 1/4" thick.
- Cut into rounds with a cookie cutter.
- Combine dough scraps and continue to roll out until all dough has been used.
- Place cookies on UNGREASED foil-lined baking sheets, and bake in a preheated 325F oven for 30 to 35 minutes.
