Zucchini with Orange and Garlic

  1. In a 12- to 14-inch saute pan, heat olive oil over medium heat until smoking.
  2. Add zucchini and cook for 2 minutes until golden brown.
  3. Turn pieces over, add garlic, and cook until zucchini is golden brown.
  4. Squeeze orange halves into pan and let juice reduce by half.
  5. Add parsley and orange zest.
  6. Season with salt and pepper.
  7. Serve immediately.
