Cheesy Chicken Burritos
- 4 pieces Chicken Breast, Boneless And Skinless
- 2 Tablespoons Butter
- 2 whole Shallots Or 1 Small Onion
- 1 whole Bell Pepper
- 2 whole Portabello Mushrooms
- 1 can (10.75 Oz. Can) Cream Of Chicken Soup
- 1 can (10 Oz. Can) Rotel (Diced Tomatoes And Peppers)
- 8 pieces Flour Tortillas (large)
- 3 cups Mexican Blend Shredded Cheese
- 1.
- Boil chicken until tender, approximately 30 minutes.
- 2.
- Chop chicken into bite-sized pieces.
- 3.
- Melt butter in a skillet or saute pan and saute diced shallots, bell pepper, and mushrooms until tender.
- 4.
- Combine chicken, shallots, pepper and mushroom mixture with cream of chicken soup and Rotel.
- 5.
- Place approximately 1 cup of mixture into the center of each tortilla.
- 6.
- Wrap into a burrito and place into a baking dish.
- Repeat until all burritos have been made.
- 7.
- Bake in a 350-degree oven for 35 minutes, removing from the oven at 30 minutes to top with cheese and returning to the oven for the last 5 minutes.
- 8.
- Serve with sour cream and guacamole.
- A side salad would be delicious with it, too.
- Be prepared for tons of compliments when you serve these.
- You may only get them as ummm though.
