Danish Fruit Pudding

  1. Place the strawberries and sugar in a medium saucepan.
  2. Mash with a potato masher.
  3. Let stand for 10 minutes.
  4. Meanwhile, stir together the water and cornstarch in a small bowl.
  5. Stir until cornstarch is dissolved and there are no lumps.
  6. Add to the berries.
  7. Cook over medium heat for about 3 minutes, stirring continuously, until the mixture begins to boil and becomes transparent.
  8. Remove from heat and add the lime juice.
  9. Spoon the pudding into serving dishes.
  10. Refrigerate about 1 hour, until chilled.
  11. To serve: top with heavy cream, yogurt, or sour cream.
  12. Sprinkle with sugar.
