Curried Couscous with Pork

  1. Heat stir-fry oil in a large nonstick skillet over medium-high heat.
  2. Add pork in 2 batches and stir-fry each batch 30 to 45 seconds until no longer pink.
  3. Remove to a bowl with a slotted spoon.
  4. Add cucumber to skillet and stir-fry 45 seconds to 1 minute until crisp-tender.
  5. Add to bowl with pork; stir to mix.
  6. Cover loosely to keep warm.
  7. Put 1 1/3 cups water and contents of spice packet (omit any olive oil or butter called for on packet) into same skillet.
  8. Bring to a boil, reduce heat to low, cover and simmer 2 minutes.
  9. Stir in couscous, cover, remove from heat and let stand 5 minutes.
  10. Fluff couscous lightly with fork.
  11. Spoon pork and cucumbers in center of serving platter.
  12. Surround with couscous and sprinkle with cilantro.
