Curried Couscous with Pork
- 1 tbsp. bottled seasoned stir-fry oil
- 12 oz. pork cutlets
- 1 large cucumber
- 1 box Mediterranean curry couscous (with spice packet)
- 1/4 c. finely chopped fresh cilantro
- Heat stir-fry oil in a large nonstick skillet over medium-high heat.
- Add pork in 2 batches and stir-fry each batch 30 to 45 seconds until no longer pink.
- Remove to a bowl with a slotted spoon.
- Add cucumber to skillet and stir-fry 45 seconds to 1 minute until crisp-tender.
- Add to bowl with pork; stir to mix.
- Cover loosely to keep warm.
- Put 1 1/3 cups water and contents of spice packet (omit any olive oil or butter called for on packet) into same skillet.
- Bring to a boil, reduce heat to low, cover and simmer 2 minutes.
- Stir in couscous, cover, remove from heat and let stand 5 minutes.
- Fluff couscous lightly with fork.
- Spoon pork and cucumbers in center of serving platter.
- Surround with couscous and sprinkle with cilantro.
