Pizza Egg Melts

  1. Split English muffins in half.
  2. Brush with 3 teaspoon (15 mL) olive oil.
  3. Place inside-up on baking sheet and toast in 450F (230C) oven until lightly browned.
  4. Remove from oven.
  5. Spread each with pizza sauce; keep warm.
  6. Heat remaining oil in non-stick skillet over medium heat.
  7. Cook mushrooms and sweet pepper until soft, about 2 minutes.
  8. Whisk together eggs and milk in medium bowl; season with salt and pepper.
  9. Pour into skillet with mushrooms and peppers, stirring to form soft curds.
  10. Spoon eggs onto English muffins.
  11. Top with pepperoni and cheese.
  12. Return to oven; heat through until cheese melts and bubbles, about 2 minutes.
